Gabor French Restaurant is currently supporting recipe of the week on the Saturday morning Breakfast show. All of the dishes featured have recipe sheets available. 1. Fresh River Trout (Serves4) 4 Trout 400-500 gr Olive oil Fresh lemon Chopped parsley Salt-Pepper ½ Kilo Sea salt 2 egg whites Method. Pre-heat oven to 240 C (No 8) Wash trout and dry well Cover baking tray with foil Put half salt on baking foil, put trout in tray, cover with remaining salt. Mix egg white and pour over it. Cook for approx.30 mins Remove foil with trout placed on it. Break salt crust Recommended to eat with Greek salad/Green salad/new potatoes
2.Pigeons with honey and balsamic vinegar (Serves 4) 4 Texas pigeons or imported frozen pigeons from France 1 soup spoon dry crushed coriander 1/2 glass port wine 1/2 glass olive oil ¼ glass Balsamic vinegar 2 soup spoons pure honey Salt –pepper Method Pre-heat oven to 200 C Remove skin from pigeons Season them and sauté in a little butter mixed with vegetable oil, until golden brown (about a minute) Remove excess oil from pan and add port wine and dry coriander. When port half reduced, remove pigeons put in oven proof dish and place in oven. Cook for about 15 mins. Sauce Over a low heat put honey, olive oil and balsamic vinegar, salt and fresh black pepper. Heat for few minutes DO NOT BOIL. Arrange pigeons in dish pour over sauce and serve.
This makes an excellent starter; pigeons should be served pink not well done.
3. Chicken stuffed with sundries tomatoes and mozzarella cheese (serves 4 ) 4 Skinless Chicken breasts 200gr each 12 sun dried tomatoes (in oil) 160 gr Fresh Mozzarella 200 gr breadcrumbs 2 eggs Little milk Little flour Salt-pepper Method. Flatten chicken breasts (put cling film on top and beat them with flattener.) Season chicken Cut sun dried tomatoes in half; put 3 tomatoes in middle of each flattened chicken breast. Put 40 gr of mozzarella in middle of each. Roll up chicken to cover mozzarella and tomatoes and pull edges towards inside. Roll until cylinder shape. Secure chicken with toothpicks.
Beat eggs with some milk. Place chicken in flour, then in egg and afterwards breadcrumbs. Leave in refrigerator for1/2 hour. Pre-heat oven to 220 C Cover oven proof dish with foil and arrange fillets in dish. Cook for about 20 mins. Cut chicken diagonally in 2cm slices and arrange on plates.
Serve with Sauté potatoes or French fries and a green salad.
4. Crème Brulee(For 9 persons.) 8 Egg yolks 650 gr fresh cream 200 gr sugar 50 gr brown sugar Little vanilla
Method. Pre- heat oven to 180 C Put the sugar, milk and cream in a bowl. Put this bowl in a bigger dish with some water in the base, over a low heat. Beat the eggs and pour over mixture and mix well (THE MIXTURE MUST NOT BECOME FROTHY.) Put the mixture in Crème brulee forms. Put forms in reasonably deep dish with water in base and cover with foil. Put in pre heated oven for 40 mins. After 40 mins check them by inserting small knife. If knife is dry, they are ready, if wet cook for few more mins. Leave to cool and put in refrigerators for at least one hour.. Just before serving, sprinkle with brown sugar, place under grill until sugar becomes crusty and serve! (You can also use gas burner which produces high flame to burn sugar.)
5.Chicken with prawns served in fresh pineapple. 4 persons Ingredients 4 chicken breasts 12 medium size prawns with the shell and heads
2 fresh pineapples 2 spring onions roughly chopped ½ onion roughly chopped 2 green sweet peppers roughly chopped Unsalted butter Frying oil Salt-pepper For the sauce Shells from the 12 peeled prawns ¼ carrot medium size roughly cut ¼ onion medium size roughly cut Celery stick roughly cut ½ glass brandy ½ glass white wine 3 glasses water Frying oil Salt/pepper 1 soup spoon corn flour Preparation of the sauce -In a small casserole dish shallow fry prawn shells with carrot onion and celery for a few min. - add brandy and ignite until flames die down. - add water,salt and fresh pepper. - Boil for 20 mins or until ¾ reduced. -Leave until cool. -Put in a blender and liquidize all ingredients. -Pass through sieve and put clear stock back on the heat.Add salt and pepper. -When reduces by ¼ we thicken sauce with the corn flour (mix with little cold water until running and add.) -Put the sauce to one side. Preparation. -Cut the 2 pineapples lengthways and carefully take out the flesh leaving the skin intact and roughly chop the skin. -Cut the chicken in medium sized strips -Wash and clean peele4d prawns -Take large frying pan and butter /oil fry spring onion sweet green pepper make sure still crunchy.Add the chicken and prawns and shallow fry for few min.DO NOT OVER COOK. -Add the sauce and cook for few mins. -Fill pineapples with the chicken and serve immediately. (Serve with basmati rice.)

Entertainmant News. The favourite guitar of U2's The Edge has been sold at an auction that raised $2.4m for a charity set up in the wake of Hurricane Katrina.
The Gibson Les Paul used on every U2 tour since 1985 sold for $240,000 while one owned by Jimi Hendrix fetched $400,000 Other items of U2 memorabilia included a pair of singer Bono's sunglasses. The Edge co-founded Music Rising, a charity to replace instruments lost or destroyed in Hurricane Katrina. Julien's Auctions, who organised the Icons of Music sale at New York's Hard Rock Cafe, said it included the largest selection of U2 memorabilia ever made available to collectors. An autographed guitar belonging to Bono sold for $180,000 a bass guitar donated by Adam Clayton for $22,000 and Larry Mullen Jr's tom-tom drum fetched $19,000 . The Edge donated other items including a 1958 Gibson archtop guitar, that sold for $105,000 and clothing accessories such as a signature knitted hat which earned $11,000 "I have to say that it is a strange feeling to see some of your stuff up here," the 45-year-old guitarist said. A saxophone signed by former US President Bill Clinton fetched $54,000 while $30,000) was paid for a pair of John Lennon's round, blue-tinted sunglasses.
